Ingredients

  • 2 unbaked Bakehouse Creations Pie Crust
  • 1 tablespoon unsalted butter
  • 1 small shallot finely chopped
  • 1 cup shredded smoked Gouda cheese
  • 8 large eggs
  • 1 1/4 cup heavy whipping cream
  • 1 teaspoon sea salt or more to taste
  • 2 cups mixed vegetables
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried thyme

Equipment

  • Oven

Method

  1. Begin by preheating your oven to 375°F (190°C). This ensures the quiche cooks evenly and the crust turns golden brown.
  2. Lay the Bakehouse Creations Pie Crust into your pie dish. Gently press it against the bottom and up the sides. If there are any cracks or holes, get a bit of leftover dough to patch them up. It’s okay to have a few rustic imperfections; they add character!
  3. In a medium skillet, melt the tablespoon of unsalted butter over medium heat. Add the finely chopped shallot and sauté for about 2-3 minutes, until it softens. Next, toss in your mixed vegetables. Sauté them until they are tender but still vibrant—around 5-7 minutes should do the trick. Set the mixture aside to cool slightly.
  4. In a large mixing bowl, crack the 8 eggs and whisk them together. Slowly mix in the heavy whipping cream, sea salt, black pepper, and dried thyme. Ensure everything is well combined and that the mixture has a smooth consistency.
  5. Now incorporate the sautéed vegetables into the egg mixture. Add the smoked Gouda cheese, stirring gently to combine. Pour this delightful mixture into the prepared pie crust.
  6. Pop the quiche into the preheated oven and bake for 35-45 minutes. You know it’s ready when the filling is set and the top is golden. Let it cool for a few minutes before slicing.

Notes

  • Use Fresh Veggies: Take advantage of seasonal produce. Fresh vegetables make a world of difference.
  • Let It Cool: Allow the quiche to cool slightly before slicing. This helps it hold its shape better.
  • Experiment with Cheese: While smoked Gouda is delightful, don’t hesitate to try other cheeses like feta or cheddar.
  • Serve Warm or Cold: This quiche is versatile. It tastes amazing warm, but it’s also delicious cold, making it a great dish for leftovers.
  • Make It Ahead: Quiche keeps well in the refrigerator, so consider making it a day in advance.
