Ingredients

  • 250 g hearty porridge oats
  • 6 tablespoons pure maple syrup
  • 1 fresh orange zested and juiced
  • 1 teaspoon warm ground cinnamon
  • 1 tablespoon fragrant desiccated coconut
  • 50 g chewy dried apricots finely chopped
  • 50 g sweet sultanas
  • 50 g tart dried sour cherries
  • 50 g blanched almonds roughly chopped
  • 50 g crunchy pecan nuts
  • 50 g unsalted pistachios shelled
  • 50 g nutrient-rich pumpkin seeds
  • 50 g sunflower seeds lightly toasted
  • 1 tablespoon nutty sesame seeds
  • 1 tablespoon ground flaxseeds
  • 1 teaspoon vanilla extract enhances sweetness and aroma
  • 25 g dark chocolate chips adds a touch of indulgence

Equipment

  • Oven

Method

  1. Start by preheating your oven to 160°C (320°F). This is crucial as it prepares the space for even cooking.
  2. Take a big mixing bowl. Toss in the oats, desiccated coconut, pumpkin seeds, sunflower seeds, flaxseeds, and a variety of chopped nuts. Stir them all together, letting their natural aromas mingle.
  3. In a separate bowl, mix the orange juice, orange zest, maple syrup, vanilla extract, and ground cinnamon. This mixture will infuse your granola with sweet and zesty flavors.
  4. Pour the wet mix into the dry bowl. Stir thoroughly until all the dry ingredients are coated. This is where the magic begins, and you’ll start feeling excited.
  5. Line a baking tray with parchment paper. Spread the granola mixture evenly over the tray. This ensures even cooking.
  6. Place your granola in the preheated oven for about 25-30 minutes. Stir the mixture halfway through to achieve that golden color on all sides. The smell? It will knock your socks off!
  7. Once you see it’s beautifully golden brown, take it out. Add in the chopped dried apricots, sultanas, sour cherries, and dark chocolate chips. Mix gently, and allow it to cool.
  8. When it’s completely cooled, break it up into clusters. Store it in an airtight container and enjoy whenever you like!

Notes

  • Watch the Oven: Ovens vary. Keep an eye on the granola as it bakes to prevent burning.
  • Cool Completely: Allow the granola to cool on the tray; it crisps up further as it cools.
  • Storage: Store in an airtight container to maintain its crunchiness.
  • Variability: Feel free to swap in whatever nuts and seeds you have on hand.
  • Batch It Up: Make enough to last the week. Granola is great for meal prepping.
