  • 45 ml 3 tablespoons of extra virgin olive oil
  • 1 tablespoon of brined capers rinsed
  • 200 g of pitted black olives
  • 40 g of dried sun-dried tomatoes
  • 2 tablespoons of the flavorful oil from the sun-dried tomatoes
  • ¼ teaspoon of freshly cracked black pepper
  • 1 tablespoon of fresh lemon juice
  • 1 small garlic clove peeled
  • ¼ teaspoon of crushed fennel seeds
  • teaspoon of red chili flakes
  • 1 tablespoon of finely chopped fresh basil
  • 1 teaspoon of balsamic vinegar

Method
 

  1. Start with gathering all ingredients. Make sure olives are pitted, and if you're using fresh herbs, chop them roughly. This isn’t a precision exercise, just make it easy for your food processor to do its thing.
  2. In a food processor, combine the olives, capers, garlic, and herbs. Pulse it a few times. You want it to break down but not turn into mush.
  3. With the processor running, slowly add the olive oil. This will emulsify the mixture and create a lovely consistency. If you desire a creamier texture, you can add more oil.
  4. Taste your tapenade and add lemon juice, salt, or pepper as you see fit. The beauty of preparing your own dip is that you can adjust to your heart's content.
