  3. In a large bowl, combine the sautéed spinach with crumbled feta cheese and chopped dill. If you’re using garlic powder, add it in now. Mix well until everything is incorporated. The flavors meld beautifully.
  4. After resting, take the dough and divide it into two parts: one for the base and one for the top. On a floured surface, roll out the first piece into a circle, around 1 cm thick. Transfer this to a pie dish, ensuring it covers the sides.
  5. Spoon the spinach mixture into the pie crust, spreading it evenly. Roll out the second piece of dough and cover the filling. Pinch the edges to seal the pie. If you like, you can use a fork to create a decorative edge. Make a few slits on the top to allow steam to escape during baking.
  6. Brush the top with a little olive oil or water for a golden finish, and sprinkle sesame seeds for added crunch. This step is important to enhance the pie’s texture and aesthetics.
