  • 100 g all-purpose flour
  • 50 g superfine sugar

  1. Start by washing and preparing your peaches. The sweetness of ripe peaches is crucial, so choose your fruit wisely. Halve, pit, and slice them into wedges. Set them aside.
  2. In a bowl, combine those gorgeous peach wedges with fresh ginger, lime zest, blood orange zest, juice, dark brown sugar, mint, and cinnamon. Gently toss everything together until the peaches are coated in flavor. Let this mixture sit for a bit. This resting time allows the sugars to develop a syrupy sauce.
  3. Next, we need to whip up the cobbler topping. In a mixing bowl, combine cold unsalted butter, toasted pine nuts, all-purpose flour, and superfine sugar. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs. Don’t overwork it; we want those lovely chunks of butter for a flakier texture.
  4. Preheat your oven to 180°C (350°F). In a baking dish, spread the marinated peach mixture evenly across the bottom. Then, sprinkle the cobbler topping generously over the peaches. It should be a rough layer that allows some of the peach filling to peek through.
  5. Place the baking dish in the preheated oven. Bake for about 30 to 35 minutes or until the topping is golden brown and the peaches are bubbling.
