Ingredients
  

  • 1 head of garlic
  • 2 sprigs of fresh oregano optional
  • 1 kg of assorted ripe cherry tomatoes in various hues
  • extra virgin olive oil
  • red wine vinegar
  • 1 teaspoon of balsamic glaze
  • 1 teaspoon of crushed red pepper flakes

Method
 

  1. Set your oven to 200°C (390°F). Preheating ensures even cooking, so don’t skip this part!
  2. Take a head of garlic. Slice it straight across the top. You want to expose the cloves without separating them. This measure adds a wonderful depth to your tomatoes.
  3. In a large mixing bowl, toss together your assorted cherry tomatoes. Feel free to include different colors to make the dish visually appealing.
  4. Pour extra virgin olive oil over the tomatoes. Add a splash of red wine vinegar. Alongside, sprinkle in crushed red pepper flakes. Toss everything together well.
  5. Spread the tomatoes in a single layer on a baking dish. Nestle the prepared garlic head in the midst of the tomatoes.
  6. Slide the baking dish into your preheated oven. Roast for about 30 to 40 minutes or until the tomatoes are blistered and caramelized. Keep an eye on them to ensure they don’t burn!
  7. After you take them out, drizzle with balsamic glaze. Allow the mixture to rest for a few minutes to enhance all the beautiful flavors that have developed.
