Ingredients

  • 1 1/2 cups 300g granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 2 pounds 900g fresh green or purple figs, trimmed and chopped into 1/2-inch (1.25 cm) chunks
  • 1 tablespoon orange zest
  • 1/4 cup plus 2 tablespoons 75 ml freshly squeezed lemon juice
  • 1/2 cup 120 ml water

Equipment

  • Large saucepan

Method

  1. Start by washing the figs gently under running water. Pat them dry. Trim the stems and chop the figs into 1/2-inch chunks. This size will help them blend into a nice jam later.
  2. In a large saucepan, combine the chopped figs, sugar, cinnamon, orange zest, lemon juice, and water. Stir everything together well. The sugar will begin to loosen and meld with the other ingredients, creating a lovely syrup.
  3. Place the saucepan over medium heat. Bring the mixture to a gentle boil, stirring occasionally to prevent sticking. Once it’s boiling, reduce the heat to low. Allow the jam to simmer for about 45 minutes. You'll see the mixture thicken and the figs break down.
  4. After about 45 minutes, it’s time to check the consistency. You can spoon some jam onto a cold plate and tilt it. If it holds its shape, it’s ready. If it’s still too runny, continue to simmer for another 10-15 minutes, checking periodically.
  5. Once the jam has reached the desired consistency, remove the saucepan from heat. Carefully pour the hot jam into sterilized jars. Seal them immediately to preserve freshness. Let them cool before labeling and storing.
  6. Now that you’ve made your jam, it’s time to enjoy it! Spread it on toast, use it as a topping for desserts, or be adventurous and mix it into savory dishes.

Notes

  • Use Fresh Figs: Always choose ripe figs for the best flavor. Look for figs that yield slightly when pressed.
  • Adjust Sweetness: You can reduce the amount of sugar if you prefer a less sweet jam. Just remember that sugar also acts as a preservative.
  • Monitor Cooking Time: Every stove and pot may vary, so keep an eye on the jam as it cooks.
  • Sterilizing Jars: Make sure to properly sterilize jars before filling them with jam. Boil them or run them through a dishwasher cycle.
  • Add Other Flavors: Feel free to play with flavors. Vanilla extract or even a splash of port can add another dimension to your jam.
