Start by washing the figs gently under running water. Pat them dry. Trim the stems and chop the figs into 1/2-inch chunks. This size will help them blend into a nice jam later.
In a large saucepan, combine the chopped figs, sugar, cinnamon, orange zest, lemon juice, and water. Stir everything together well. The sugar will begin to loosen and meld with the other ingredients, creating a lovely syrup.
Place the saucepan over medium heat. Bring the mixture to a gentle boil, stirring occasionally to prevent sticking. Once it’s boiling, reduce the heat to low. Allow the jam to simmer for about 45 minutes. You'll see the mixture thicken and the figs break down.
After about 45 minutes, it’s time to check the consistency. You can spoon some jam onto a cold plate and tilt it. If it holds its shape, it’s ready. If it’s still too runny, continue to simmer for another 10-15 minutes, checking periodically.
Once the jam has reached the desired consistency, remove the saucepan from heat. Carefully pour the hot jam into sterilized jars. Seal them immediately to preserve freshness. Let them cool before labeling and storing.
